TIM: Soon, Sullivan taught her how to read, first with raised letters, and then with braille, a writing system for the blind made up of raised dots. Just a few days after the incident at the water pump, she learned thirty new words in just a few hours!Īn animation shows more words above Keller's head: "mother", "father", "teacher", and "sister". TIM: Once she began to understand words, Helen could start understanding the world around her. Her expression from before has changed to a pleasant expression. The word quickly takes on the blue, rippling quality of water. TIM: She understood the connection between the word "water" and the water itself.Īn image shows Keller against a black background. Keller's left hand is under the water, as Sullivan draws a word into Keller's right palm. All of a sudden, something clicked in Helen’s mind.Īn animation shows Sullivan and Keller standing at a water pump. Sullivan was pumping water onto Helen’s hand, and spelling the word “water” onto the other. TIM: One day, the two were outside, at a water pump. The letters A, B, C, and D, appear above each one. TIM: Well, basically, she would use her finger to spell letters out onto Helen’s palm.Īn image shows Sullivan's hand drawing four letters onto the palm of Keller's hand. TIM: But she also spent time teaching her the manual alphabet. Sullivan sometimes had to physically fight Helen to get her to behave!Īn image shows Sullivan physically holding Keller back against a wall as Keller lashes out with her arms and screams. TIM: When she went down to Alabama, she was just 20 years old, and young Helen was only six.Īn image shows a worried Sullivan and a young, angry Keller appearing together. She has short, dark hair and a strong jaw. But she got a good education at a school for the blind in Massachusetts.Īn image shows Annie Sullivan. She lost most of her eyesight at age five, and she and her brother grew up in a state home for orphans. Sullivan had had a tough childhood of her own. Eventually, she found a young woman named Annie Sullivan. TIM: Her mother tried to find a tutor who could help Helen learn to get along in the world. Her parents look on with confusion and concern. TIM: She reacted like any scared kid would - with temper tantrums and outbursts.Īn image shows young Keller in her family's living room. TIM: It was like she was trapped in a prison of darkness and silence. She couldn’t understand what was going on around her, and she couldn’t express her feelings.Īn image shows a young Keller appearing in front of a black background, looking afraid and unsure. But it left Helen terrified and confused. TIM: Well, doctors couldn’t really figure out what the illness was. TIM: A serious illness left her permanently deaf and blind at only 19 months old.Īn image shows Keller as a young child, standing in front of her house. The photo paper has it's own separate area that is kept relatively dark to keep the photo paper fresh. It can also scan and print documents and pictures. It has the function to print photos directly from the printer or from the hook ups mentioned earlier. You can also plug in USB and three other memory card types and print directly. The printer will also print hooked up if you do not have a router to connect to. The wireless option allows me to sit anywhere in my house and print files. This is my first wireless printer I have purchased and I love it so far. I see that at least 2 times per week, and have to reset the entire machine. Considering that it is wireless, and therefore not by my laptop, it is a huge inconvenience when you think you've printed what you need-then you find that not only did it jam, but it wasted 10 sheets of paper with a line across each one as it shoved paper through. It gets a paper jam every 5 or so sheets. I print out of necessity, and my poor kids can't print their webkinz stuff cuz mommy says it uses too much ink!!Īs to the quality of the machine-also very subpar. I find that I don't print alot of things just for this reason-it simply costs to much. This printer sucks ink like a vampire sucks blood. There is no way you can buy ink and photo paper for nearly the cost or quality of having them printed somewhere professionally. I use my printer alot, but not for photos. True HP photosmart printer sucks ink, and wireless is terrible. The design does no bother me whatsoever but it's also not aesthetically pleasing as well. The construction is 100% plastic however the plastic is high quality and built to last. I see myself replacing the ink every few months. The printer could be better in ink efficiency. I believe it's about as good, if not better ,than the copying machines in offices. Very good at all tasks it is built to do (printing, scanning, copying) with no issues whatsoever. Despite it being a solid printer is all tasks it is built to do, one issue that I have which is absolutely preventing me from giving this printer 5 stars is how often I have to replace the ink. I never got around to setting up the wifi with the printer but I believe it is possible. It's easy to use and the small screen included the printer does enable me do tasks such as copying and printer head cleaning without requiring to use my computer as well. This is my first all-in-one printer and I must say it does a solid job.

Once the protein structure breaks down too much, individual micro-droplets of fat and water coalesce, breaking out of the protein matrix and causing the cheese to completely break. Depending on the type of cheese, this takes place at anywhere from around 120☏, for super-melty high-moisture process cheeses like Velveeta, all the way up to 180☏ and higher, for super-dry cheeses like well-aged Parmigiano-Reggiano. Continue to heat the cheese, and eventually enough of its protein bonds will break that it'll flow and spread like a liquid. Ever notice how a piece of cheese left out in the heat for too long forms tiny beads on its surface? Those are beads of milk fat. Other flavorful compounds present in cheese are mostly intentional by-products of bacteria and aging.Īs cheese is heated, the first part to go is the fat, which begins melting at around 90☏. Salt can have a profound effect on the texture-saltier cheeses have had more moisture drawn out of the curd before being pressed, so they tend to be drier and firmer. Salt and other flavorings make up the rest of the cheese. These micelles link together into long chains, forming a matrix that gives the cheese its structure. These proteins come together headfirst in bundles of several thousand, protecting their hydrophobic heads and exposing their hydrophillic tails to their watery surroundings. Individual milk proteins (the main ones are four similar molecules called caseins) resemble little tadpoles with hydrophobic (water-avoiding) heads, and hydrophillic (water-seeking) tails. Protein micelles are spherical bundles of milk proteins. Because of this, and because of their suspension, these tiny globules don't come into contact with each other to form larger globules: cheeses stay creamy or crumbly, instead of greasy.
